Spinach, green beans, potatoes, radishes, and cauliflower

More spinach this week – I think I’m going to make eggs florentine, either for weekend brunch or as breakfast-for-dinner.  The potatoes are currently roasting in the oven with some sliced onion and a couple of chicken leg quarters.  Nick is cleaning the green beans, which I will then briefly sauté before dressing them in a honey-mustard vinaigrette I whipped up.

No plans yet for the radishes or cauliflower.  Any ideas?
