Lettuce, cucumber, fava beans, cherries, eggs, potatoes, eggplants

Truly, eggplant is one of my very favorite vegetables.  I love it French, Italian, and off-the-cuff.  The Chinese do some very delicious things with it, and the Mediterranean plays host to an enormous variety of eggplant preparations – think Greek moussaka, pan-Middle Eastern Baba Ganoush, and the awesome fried eggplant slices that go into falafel sandwiches.  And I absolutely adore baingan bharta, the heavenly spicy eggplant mash from India.  That is what’s happening to these eggplants.  The cucumber will play along in a cooling raita with a hint of mint and creamy Greek yogurt.

I’m excited about the fava beans, too.  I’m going to keep it simple with them – a little lemon and mint, perhaps some goat cheese, and pasta… or maybe quinoa.

I fear cherry season is slipping away from me and want to do so many things with these cherries.  Cobbler? MuffinsClafoutis?

Potatoes, lettuce, eggs… all I need is some tuna and green beans, and I’ll have a Niçoise salad!

    Um, do you remember how I made that fuss about craving eggplant for the first time in my life? I kinda woke up the next morning and forgot about it. However, my housemate just discovered eggplants for 99c a kilo, so methinks there might finally be some Camille’s eggplant ragout in my life soon!

    P.S. Guess who has a fancy chocolate heading her way as of this morning? 😀
