This Week’s Harvest, 6/30
Beets are about the last thing I expected to get in the summer. Shows what I know. But now that I know how good they are with miso, I’m thinking maybe some miso sautéed beets over soba or udon noodles would be a pretty great summer dinner. Toss in some of those onion tops, and it could be downright refreshing! I do wish they’d left the greens on the beets, though – some leafy greens would be great in there.
Now that Joe Pastry has convinced me that pitting the cherries for clafoutis is unnecessary, I really want to give it a try. On the other hand, these cherries are such a gorgeous garnet-red, I’m really tempted to candy them.
I’d love to make a fava bean dip of some sort, but I fear it would be gone too quickly to validate the effort. Maybe I’ll just make the quinoa thing again. Or I could put those eggs to work and make a fava bean frittata. That would be good with a simple green salad.
The zucchini are going to become the first of many, many zucchini and tomato pasta sauces I will make this summer. Fortunately, I love the stuff.

I can recommend the fava bean/egg combo, although I made the slightly more pedestrian omelette 😉 I can’t believe we’re still getting beets!! ARG!
Those beets are a bit of a surprise, season-wise! I just got a bunch at my farmers markets, but it’s winter here, of course. I still have half of them left, and I do like the sound of your miso combination…
I was also thinking about a fava bean dip – there were so many of them this week that I think I have to expand to two dishes anyways… Still wish my pick-up location supported the fresh egg delivery, they look so good.
I didn’t get beets on Friday, but more cucumbers. Looks like I’ll be going for the yogurt dip as well (which sounds good for the zucchinis). Is it possible to just live off of veggie-derived condiments? Because I think I could do just that…
