Spinach, apples, purslane, eggs, shallots, potatoes, carrots

Spring is here!  As evidenced by the spinach, with which I am dying to cook Italian.  Spinach pizza, perhaps, (I’ve been meaning to try out this dough recipe for quite some time now) or some kind of spinach-ricotta-pasta concoction.  Ooh!  Or spanakopita, which is not at all Italian, but still really tasty.  Spinach is also really good with eggs, now that I think about it.  Omelette?  Fritatta?  Quiche?  So many options.

A distinctly different-looking batch of pourpier/purslane arrived this week.  It’s getting to be salad season again, and considering that those really look like baking potatoes, a simple meal of baked potatoes and purslane salad is probably in the offing.  (With shallots in the vinaigrette, naturally.) Along with salad season comes crudités season, and those carrots will be perfect for dunking into dips like cervelle de canut.

These apples are a pretty array of colors, but I am getting pretty tired of them.  Can’t wait for the fruits of Spring to start showing up!

    That spinach looks fantastic. Must be such a welcome relief after the weeks, or is it months?, of root vegetables.

    I vote spanakopita! With so much feta that you know you’re doing good things to your bones 🙂

    Louise – It certainly is.

    Hannah – Ah, but spanakopita requires more of a time investment than I have to spare. Another time. For now, it’s spinach and sun-dried tomato pasta, with enough ricotta to make my bones happy.

    I’ve missed spinach and since D. doesn’t like it, I just eat it straight sautéed in olive oil and garlic. Mmm. Thanks for the link! That dip is certainly delicious. I’m going to have to try making it at home next 😉
